Makki roti and sarson saag is a favorite traditional Indian meal. The cornmeal is rolled in dough with warm water and made into breads.

It is a skill hard to master. My 91 year old mother-in-law gets help from an Irish lady for cooking, and due to instructions which are conveyed very well and followed even better, they manage to produce excellent results!…Really amazing.

The Greens are boiled and then mashed. They can include Spinach, mustard leaves, spring Greens.

Slivers of Ginger are an ideal accompaniment.
