Lunch today was vegetable fried rice

Take a big wide pan.

Fry some cumin seeds and onions in oil. (add some salt, it helps to draw out the moisture).

Add garlic to sauteed onions.

Add peas and sweetcorn. (I used frozen peas and sweetcorn). Add some spices (coriander powder, a pinch of turmeric, a pinch of garam masala).

Fry the veg for a few minutes, then add washed rice.

Fry for a few more minutes, then add water. (Mother-in-law’s tip: the water should be enough to soak the rice and veggies, about an inch high).

Bring the mixture to a boil, then reduce the flame to the lowest, cover it and let it cook (mainly) undisturbed. You can stir it once.

Rice is ready.

Serve it with plain yogurt, and optional green chillies…..
